Abstract

This project has as main objectives a) developing strategies for signal acquisition in the lab scale beer fermentative process, b) developing a prototype of the sensor for on-line monitoring of pilot scale beer fermentations and c) implementing a prototype monitoring system (Software and Interface) at pilot scale. The main innovative characteristics of the project are a) the development of methodologies to calibrate the fiber optics measurement system; b) the implementation of analysis using UV-Vis e SWNIR in the brewing industry, by means of fibre optics and multivariate analysis strategies; c) the development of open source software for data acquisition and treatment of signals; and d) the development of a fibre optic sensor adapted to the brewing industry processes.
