Abstract

The egg products industry lays its production in the needs of the food industry, focusing its technology in liquid or powdered egg products. EGGREADY has as main objective building a prototype for the continuous production of fried eggs, aiming at innovating at european level regarding the production of egg derivatives for the HORECA channel, while considering consumers’ demands both in terms of food safety and food quality (e.g. by reducing the amount of lipids in the production of fried eggs and using Salmonella-free eggs). This project will thus potentially generate significant added-value to both process and products.
