Abstract

"Serra da Estrela" Cheese is an ex-libris of Portuguese gastronomy, where it is necessary to invest technological efforts to protect and promote its traditional and exclusive character (guaranteeing the origin of raw materials), as well as adapting it to the current market (increase shelf life, new forms of presentation, etc.) and thus guarantee its sustainability. Protect and value Serra da Estrela PDO product by means of new technological solutions, guaranteeing the authenticity of the milk used in its production. Molecular markers will be developed to guarantee the exclusive use of milk from the Serra da Estrela and Churra Mondegueira breeds
