The objective of this work was to evaluate and compare the behavior of two yeast strains in the production of white sparkling wine. In addition, it was also the focus of the study to evaluate if the immobilization of non-commercial yeast allows to eliminate the necessary rémuage step in the production of sparkling wine by the classical method.
