Abstract

Wine colour owes its importance to the fact that it is the first attribute appreciated by the consumer. In order to control it and its variability in the final product, the CIELAB method for colorimetric analysis enabled the characterization of the products colour and established a direct correlation with the consumers perception, making possible the definition of what is the tolerance threshold in terms of an admissible variation of colour between samples of the same product.
