Mycotoxins adsorption properties of Kefir microorganisms

Abstract

Mycotoxins are toxic secondary metabolites produced by fungi, which occurs in human food and animal feed. In this way, the control and mitigation of their impact on human and animal health are of current concern. Kefir, a fermented milk produced from grains made up of bacteria and yeast that live in a symbiotic association, proved to have mycotoxin-adsorbing properties and potential to lower the bioavailability of mycotoxins.
