"The project was led by the beer group, the Biological Engineering center of the University of Minho and the Faculty of Sciences of the University of Porto (FCUP).
“As a result of this research, a new recipe was created for non-alcoholic beer that has a taste and fragrance identical to conventional ones and that meets organoleptic requirements, thus enabling its future commercialization,” explained UMinho, quoted by ECO.
The researchers believe that the new formula “may find its way onto the beer market”. The limitation of the difference in aroma compared to beer with alcohol was left behind.
“Through the use of unconventional yeasts, which come from beer, wine must or even soil, in conjunction with an innovative continuous fermentation process, it was possible to obtain a product with characteristics that correspond to market demands:
a beer with little alcohol, but similar to those with a higher alcohol content.”
