Characterization of chitosan-based edible films incorporating bioactive peptides – influence of peptide molecular weight

Edible films are capable of improving the food quality, enhance sensory properties and increase the shelf life of various food products. Chitosan is a widely used biodegradable and non-toxic polysaccharide with good film forming and mechanical properties. Besides acting as protective barriers, edible films can be used as carriers of bioactive compounds, thus enhancing the functional properties of the food product by promoting health benefits.
